37 West is the creation of Gill. With an Honours degree in Hotel Management and years of experience in this field as well as owning a Cafe Bar in Edinburgh, 37 West is the dream coming together where her passions for food, people and healthy eating have merged. Gill has currently expanded and opened a new restaurant in Galway, City 56 Central. She has also set up a partnership with Lisa Regan and together and formed a business for self employed women called Strive for it.
